Are you constantly looking for desserts that won’t ruin your entire week of clean eating? I know I am, especially around the holidays! 4th of July is just about here and what better then a dessert that is festive, delicious, and allergy-friendly? I am so excited about this elegant-looking dessert that is so easy to throw together. Use your favorite jar or glass, and enjoy your individual Berries ‘N Whipped Cream with friends and family.
Ingredients:
- 1 can organic coconut milk (full-fat), refrigerated
- 1/2 tsp organic vanilla extract
- 1 cup fresh organic berries (or fruit of choice)
- Optional: 2 drops liquid vanilla stevia or sweetener of choice
- Optional: Garnish with fresh mint
Tip: I always keep a can of coconut milk in the fridge in case I want to throw together a dessert with whipped cream.
Directions:
- Scoop out the top (thick) part of the coconut milk from chilled can.
- Place in bowl and add sweetener of choice.
- Whisk together well for 2 minutes, or until fluffy.
- Using a jar of choice (martini glass, mason jar, etc.), layer fruit and coconut whipped cream.
- Garnish with mint and serve.
