Pancakes Five Ways

I eat pancakes pretty much weekly. Maybe I’ll toss in some dark chocolate chips or a little banana, it all depends on my mood. This week we’re celebrating Pancake Tuesday so I thought I’d roundup some of my favorite pancake recipes. They are great recipes to develop and play around with because there are endless combinations and everyone loves waking up to a batch of pancakes!

Here’s a tip for you: when you make a batch of pancakes, freeze the extras and heat them up in the toaster. That way, if you’re craving pancakes on a hectic Thursday morning, all you have to do is pull one out of the freezer and pop it in the toaster. Voila!

1. Banana Pancakes: Like the Jack Johnson song. And they’re pretty good for you too. Need I say more?

2. Diner Style Pancakes: Bring the diner to your kitchen with these fluffy flapjacks. Serve with fresh fruit!

3. French Canadian Pancakes: These are a mix between a pancake and a crepe; and they are absolutely delicious.

4. Whole Wheat Pumpkin Pancakes: These are one of Living Lou’s most popular recipes, and rightly so.

5. Living Lou’s Vegan Pancakes:
Just because you’re vegan doesn’t mean you can’t enjoy Pancake Tuesday!
