Muffins that double as a breakfast item and a dessert item (add some Cool Whip Free to the top of the muffin to make a faux-cupcake) make me smile. Actually, if we’re being truthful it makes me downright giddy. Added bonus: three ingredients. Best part: one of the ingredients is Nutella, and one of the other ingredients is pumpkin. Um, can I just say: Nutella and Pumpkin sitting in a tree, K-I-S-S-I-N-G!If Nutella isn’t your thing (there might be something wrong with you, FYI), you can simply not add the chocolatey-hazelnutty goodness to the recipe, and try an added a handful of dark chocolate chips to the mix. Or if you’re feeling super adventuress you can add the streusel topping from these cra-mazing bran muffins.
And don’t forget the best part of the whole baking process: licking the Nutella spoon clean! #foodgasm
Nutella Swirled Pumpkin Muffins
Ingredients:
1 box spice cake mix
1 can pumpkin
Nutella
Directions:
- Mix cake mix and pumpkin together (make sure it’s all mixed together – cake mix tends to like to hide in the bottom of the bowl).
- Evenly distribute batter between 24 cupcake liners (or you can make 12 large muffins).
- Add a teaspoon or so of Nutella to each muffin, and using a toothpick swirl the Nutella around the pumpkin batter.
- Bake muffins following instructions on the cake mix.
