Oatmeal Caramel Apple Cobbler

Cozy sweaters, colorful foliage, apple picking, pumpkin carving and more – it’s easy to name reasons why we love fall.  But nothing beats the treats at fall celebrations.  Who doesn’t love a freshly dipped caramel apple?

You can skip the hayride with this recipe for Oatmeal Caramel Apple Cobbler, an easy way to enjoy one of our favorite fall treats at home.  After one bite, this cobbler recipe will surely become the apple of your eye.

Here’s what you’re gonna need:

  • 6 large apples (I used Granny Smith)
  • 1 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • ½ stick of butter

For the crust:

  • ¾ cup all-purpose flour
  • 1 cup old fashioned oats
  • ½ cup applesauce
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk (I used vanilla almond milk)
  • 3 tablespoons melted butter
  • 1 egg

Now here’s whatcha gotta do:

  1. Preheat your oven to 425 degrees.  Lightly grease a large baking dish.
  2. Peel and slice apples and place in large bowl.  Add brown sugar and flour and stir to coat.
  3. In another bowl, combine ¾ cup flour, oats, applesauce, ¼ cup sugar, baking powder and salt.  Stir milk, melted butter and egg together add fold in to batter, being careful not to over mix.
  4. Melt ½ stick of butter in a large skillet   Add apple, flour and brown sugar mixture to butter and stir frequently.  Cook until mixture is boiling and apples are tender.
  5. Add fruit mixture to baking dish.  Spoon crust batter evenly over fruit.
  6. Bake for 25 to 30 minutes until crust is firm in the center and brown.
