I give you sweet potato buns. They’re healthy, simple, and extremely customizable. Not to mention a GREAT carbohydrate to add into your diet because they are rich in vitamins, antioxidants, magnesium, and beta-carotene. Make them into a chicken sandwich for lunch or an egg sandwich for breakfast as a delicious, healthy sandwich option. I like the idea of a make-your-own sandwich bar kind of night!

Ingredients:

  • 1 large sweet potato
  • 1 tsp extra-virgin olive oil (or coconut oil)
  • 1/2 tsp ground cinnamon
  • Himalayan sea salt

Directions:

  1. Preheat oven to 400 degrees.
  2. Line baking sheet with foil and spray it.
  3. Cut sweet potatoes into 1/2 inch thick rounds.
  4. Toss with oil, cinnamon, and sea salt.
  5. Lie flat on baking sheet.
  6. Bake for 25 minutes or until fully cooked, flipping over halfway through.
  7. Serve with fillings of choice for a delicious sandwich.
