I give you sweet potato buns. They’re healthy, simple, and extremely customizable. Not to mention a GREAT carbohydrate to add into your diet because they are rich in vitamins, antioxidants, magnesium, and beta-carotene. Make them into a chicken sandwich for lunch or an egg sandwich for breakfast as a delicious, healthy sandwich option. I like the idea of a make-your-own sandwich bar kind of night!
Ingredients:
- 1 large sweet potato
- 1 tsp extra-virgin olive oil (or coconut oil)
- 1/2 tsp ground cinnamon
- Himalayan sea salt
Directions:
- Preheat oven to 400 degrees.
- Line baking sheet with foil and spray it.
- Cut sweet potatoes into 1/2 inch thick rounds.
- Toss with oil, cinnamon, and sea salt.
- Lie flat on baking sheet.
- Bake for 25 minutes or until fully cooked, flipping over halfway through.
- Serve with fillings of choice for a delicious sandwich.
