Life comes at you fast. And in those moments when friends show up unexpectedly or you’re just in need of a wine and appetizers night, it’s important to have some tried and true go-to apps on hand. For me, that recipe is Pimento Cheese.
It’s easy to pull together in just a few minutes, I usually have all of the ingredients on hand, and, if I don’t, it has so few ingredients that a 5-minute trip to the grocery store should cover. Plus, you can serve it as a dip, a spread, or a sandwich filling. If I’m making it for a party or as an appetizer, I’ll go traditional and serve it with crackers as a spread, but then I’ll likely spend the next several days making Pimento Grilled Cheese, Bagel with Pimento Cheese (as pictured), mixing it into Deviled eggs, or even just sneaking a forkful on occasion. If you really want to go the Southern route, you can even serve it with fried green tomatoes.
This is a recipe you’ll want to try next time you need something delicious in a pinch – and then you may want to give your skinny jeans a day off.
Ingredients:
8 oz. Cream Cheese, softened
2 cups shredded Cheddar Cheese
1/2 cup Mayonnaise (all Southern girls know only Duke’s Mayonnaise will do!)
1 4 oz. jar Diced Pimentos
Garlic Powder, Cayenne Pepper, Onion Powder, Pepper, and Salt to taste
Directions:
1. Mix cream cheese, cheddar cheese, mayonnaise, diced pimentos in a mixing bowl on medium speed until well blended.
2. Stir in garlic powder, cayenne powder, onion powder, pepper, and salt to taste. I usually am pretty heavy handed with my seasonings but several recipes I looked up online recommended 1/4 to a 1/2 teaspoon each for garlic powder, cayenne pepper, and onion powder.
3. Enjoy! See? I told you it was easy.
