For most of us, our introduction to avocados came at the end of a tortilla chip as that heavenly dip known as guacamole. Today avocados can be found in omelets, salads, on burgers, pizza, and in brownies – the possibilities are endless.
With summer right around the corner, avocados are making a triumphant return to my kitchen. Green oblong orbs of pure bliss; there is nothing better than a fresh, ripe avocado begging to be used in some culinary delight. Last summer it was all about mashing avocado on top of my favorite veggie burger and smothering the whole thing in sautéed mushrooms and spicy pickles. This summer I want to be more adventuress with my favorite green fruit; I want to use avocados to their fullest potential.
I stumbled upon this recipe and was immediately drawn to it as it uses four of my favorite flavors: avocado, garlic, lemon and basil. This pasta “sauce” was everything the ingredients promised it would be: fresh, light, and incredibly zingy. The lemon and basil brought this dish alive, the flavors melding perfectly to make summer seem more like a reality.
I also grilled up some shrimp to round out this light summer inspired supper (don’t worry, if you don’t have access to a grill just toss some shrimp in a skillet and sauté until pink), but chicken or scallops would also be great if you want more than pasta for supper.
Creamy Avocado Pasta Sauce

Yield: 2-3 servings
Ingredients:
1 avocado, pitted
1 Tbsp EVOO
2 cloves of garlic, peeled
juice of half a lemon + lemon zest for garnish
basil (dried or fresh)
salt
pepper
8 ounces cooked whole wheat pasta
Directions:
1. Bring salted water to a boil and cook pasta.
2. Meanwhile, place garlic cloves, lemon juice, and olive oil into a food processor (a blender will work too). Process until smooth.
4. Add pitted avocado, basil, and salt. Process until smooth and creamy.
5. When pasta is done cooking, drain and place pasta into a large bowl.
6. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately.
