Now that “real” winter has settled in The Lou (it snowed and everything), breakfast becomes less about the ease of making toast, slathering it with peanut butter and sliced bananas (or sliced strawberries – yum!), and more about getting something warm and filling into my system.
I love oatmeal almost as much as I love books, NARS blush and my Tory Burch Reva flats; this my friends, is a serious statement – those three things make my world go ’round right now. Oatmeal is my homegirl (homeboy?). She and I go waaaaaaaay back – like all the way back to before pre-K (though in the 80’s I don’t think it was called that) and the love just keeps getting stronger.
I usually dump whatever I have on hand into my oatmeal: PB2 and bananas; almonds and strawberries; pecans and brown sugar; and now I pretty much live on apple-tastic oats. Seriously, this tastes like apple-freaking-pie in a bowl. Seriously.
Apple-tastic Oats
- 1 cup water
- ½ cup old fashioned oats
- ½ – ¾ tsp cinnamon
- ¼ tsp nutmeg
- dash of salt
- 1 apple, cored and chopped (try a Granny Smith for “real” pie flavor)
- 7 pecan halves, chopped
- brown sugar
- skim milk
- Bring water to a boil on the stove add oats and cook for 3 minutes, stirring constantly.
- Add in chopped apple, cinnamon, nutmeg, and salt – cook an additional 2 minutes or until thick.
- Pour oats into your favorite bowl, garnish with chopped pecans, brown sugar and a splash or two (or more, depending on your preference) of skim milk.
Dig in, warm up and have a great start to your day!
