I am obsessed with breakfast sandwiches. Absolutely obsessed. I will wake up earlier just so I can eat one…or two.
Through the years, I have tested and enjoyed many breakfast sandwiches. There was a phase where it was just buttered toast and roughly 10 pieces of bacon. Then there was the phase where it was a scrambled egg with bacon – which I ate every. single. day. for breakfast from the ages of 10-13. But as I’ve grown up, and matured (ha! somewhat) I’ve finally found the perfect sandwich. Today is your lucky day because I will share it with you.
You will need:
- 1/2 an english muffin (I like whole wheat), toasted and buttered
- 1/2 an avocado, mashed
- 1-2 pieces of bacon, cut in half
- 1 egg
- salt and pepper
And here’s how you make it.
1. Heat a small pan to medium heat. Cook bacon until desired doneness, I like mine crunchy! When bacon is done, remove from pan and pour off some of the fat.
2. Cook egg. I like mine done over easy.
3. Spread avocado over toasted and buttered english muffin. Add bacon and top with egg.
4. Season with salt and pepper.
Give this a try for your next breakfast. It’s relatively fast to make and super delicious.

I’m completely obsessed with breakfast sandwiches on English muffins too! I usually just have a fried egg with a bit of melted cheese in my sandwich but HOW IN THE WORLD did I not think of adding avocado!? Thank for for this genius

I am in *love* with bacon and avocado. You should try having slices of back-bacon with avocado! It’s like having buttered bacon! I am for sure going to try this recipe out
