Grilled Cauilflower

First let me say this: I despise cooked cauliflower. The consistency. The smell. I get goosebumps just thinking about it. #yuck

All that being said, I eat cauliflower raw with dip and much to my surprise, I will eat grilled cauliflower. I’m not sure why I didn’t think of trying to grill cauliflower sooner (probably because my dislike for the cooked veggie runs deep). In fact I didn’t really think of it.  My parents did, and then unsuspecting me had no choice but to eat the veggie.  I was floored, I actually enjoyed (maybe I should say I didn’t mind) eating cooked cauliflower.

Opening new doors is part of what I love about cooking. The ability to change one’s mind about a previously hated or ignored food has a lot to do with how it is prepared. I can assure you I don’t think I’ll ever be able to sit down and eat a bowl of steamed cauliflower … the smell of wet gym socks would be too great. But grilling cauliflower until there it’s slightly caramelized and smokey – that’s something I can get behind.

Grilled Cauliflower

Ingredients

cauliflower florets or steaks
favorite salad dressing or marinade

Directions

1. Decide if you want cauliflower florets (how I grill them) or steaks (slice the cauliflower vertically – fancy!) and get to slicing and dicing while your grill is preheating to medium heat (around the 350 mark).

2. Toss/coat the cauliflower with your favorite dressing OR you can make your own marinade/dressing.

3. Once your grill is heated place cauliflower over indirect head (not over the flame) and grill, turning once, until tender (if you stick the cauliflower with a fork it should slide off).

4. Dig in!
